La Fee Parisienne is an absinthe packed with the flavours of traditional Grand Wormwood, Green Anise, Star Anise, Hyssop and Fennel, giving a fresh herbal aroma. Time was spent creating a recipe to reflect those top quality absinthes of the nineteenth century and the whole distillation process is carried out by hand and monitored closely to ensure consistency throughout. Central ingredient being Grand Absinthe (Artemisia absinthium) and having a classic strength of 68%abv. A mere fraction of a change in one ingredient, caused by a natural variation, can upset the final balance of the spirit. Best enjoyed using the traditional method of drinking with sugar and water. Each distillation takes place in small copper stills that have the capacity to produce just over 100 bottles. The distilled XS is now at 76% abv and is left to mature, after which purified natural spring water is added to reduce its alcohol level to 53%. La Fee Absinthe Made to an original 19th century recipe this is a multi award winning authentic absinthe. The wine alcohol, herbs and plants, including the wormwood are soaked in the stills overnight resulting in a beautifully scented mixture.
