I purchased the book after attending a pressure cooking workshop with the author, Catherine Phipps, inspired by the dishes she demonstrated. Use it pretty much every day and each recipe I have tried in Modern Pressure Cooking has turned out beautifully! I have used a pressure cooker for decades but only made stew, spaghetti bol and soups in it. If you pressure cook you need this book.

In particular I like that it’s always obvious which are the things you *have* to do exactly right, and what you can play around with. She writes beautifully and explains the workings of a pressure cooker very clearly. The author has clearly actually cooked the recipes she is sharing - which gives you confidence when trying things out.

as well as some beautiful looking modern recipes that I can’t wait to try. Never had a issue with using these recipes with my instant pot. And not too lengthy ingredient lists either which is wonderful! No fear here - these recipes are good and interesting.

Just really easy delicious cooking. Many of the recipes have variations so you can use the techniques to cook pretty much anything you like. I love this book. And importantly, Catherine’s recipes work.
